Reduction of Moniliformin in Corn by Heat Processing
Journal of Food Science, 2003ABSTRACT: The effects of autoclaving, baking, extrusion, frying, and roasting on the stability of moniliformin (MON) in spiked (5 μg/g of MON) corn‐based food products were investigated. Roasting corn meal at 218 °C for 15 min had the most significant effect (p ≤ 0.05) on the reduction of MON (44.6%).

Moniliformin in cereal grains available in the Japanese market
Food Additives & Contaminants: Part BMoniliformin (MON), a mycotoxin produced by Fusarium species, has recently raised health concerns. Therefore, MON levels were determined in 399 cereal grain samples obtained from retail stores across Japan between April 2020 and July 2024. The survey showed the presence of MON in 36% of the tested samples.
