Thermal extraction and characterization of pectin from semi‐solid by‐products of the olive oil industry

open access: yesJournal of the Science of Food and Agriculture, Volume 105, Issue 11, Page 5863-5873, 30 August 2025.
Abstract BACKGROUND The valorization of agro‐industrial by‐products is crucial for promoting sustainability and circular economy. Olive mill semi‐solid by‐products (OMSbP), also known as alperujo, contain valuable bioactive compounds, including pectin, which can be extracted and used in food applications.

Utilization of Fruit Juice Processing Wastes as Prebiotic Ingredients in Probiotic Yogurt: Effects on Microbial Short Chain Fatty Acid Production. [PDF]

open access: yesFood Sci Nutr
This study evaluated fruit juice processing wastes (apricot, peach, apple, and grape pomace) as prebiotic sources in probiotic yogurt. The addition of these pomaces led to significant increases (p < 0.05) in short‐chain fatty acids (acetate, butyrate, propionate), benefiting gut microbiota.

Laxative Effect of Lactobacillus paracasei Glory LP16 on Loperamide‐Induced Constipation in Mice

open access: yeseFood, Volume 6, Issue 4, August 2025.
ABSTRACT Constipation is a common gastrointestinal disease. In recent years, probiotic intervention has often been used to solve such problems. However, the results of existing studies on different intervention times and dose differences are not consistent. Therefore, it is necessary to conduct research on specific strains.

Structural Characterization and Physicochemical Property of a Purified Fucosylated Glycosaminoglycan Sulfate From Holothuria leucospilota

open access: yeseFood, Volume 6, Issue 4, August 2025.
(1) The main chain structure of Holothuria leucospilota polysaccharides (HLP‐Ⅰ) was presumed to be roughly as →3)‐β‐d‐GalpNAc‐(1→4)‐β‐d‐GlcpA‐(1→. (2) with T‐Fucp on the branched chain or a rockulose chain consisting of →3,4)‐α‐l‐Fucp‐(1→. (3) HLP‐Ⅰ showed high amorphous platelet content and disordered arrangement, while the molecule adapted a sphere ...

Ganoderma Sinense Soluble Dietary Fiber Alleviates Nonalcoholic Fatty Liver Disease by Regulating Liver Metabolism

open access: yeseFood, Volume 6, Issue 4, August 2025.
This study evaluated the effect of soluble dietary fiber from Ganoderma sinense on nonalcoholic fatty liver disease (NAFLD) by establishing in vitro cell and in vivo mouse models. Ganoderma sinense soluble dietary fiber (GSSDF) alleviates nonalcoholic fatty liver disease by regulating lipid metabolism and reducing oxidative stress.

Fucoidan From Brown Algae as a Functional Food Ingredient: A Promising Anticancer Agent

open access: yeseFood, Volume 6, Issue 4, August 2025.
Fucoidan, a bioactive polysaccharide from brown algae, inhibits receptor tyrosine kinase (RTK) activation and vascular endothelial growth factor (VEGF) signaling, suppressing the phosphoinositide 3‐kinase/protein kinase B/mammalian target of rapamycin (PI3K/Akt/mTOR) and RAS/RAF/mitogen‐activated protein kinase/extracellular signal‐regulated kinase ...
