Myrosinase is the beta-thioglucosidase enzyme which catalyses the hydrolysis of glucosinolates, a group of naturally occurring plant metabolites. Glucosinolates are S-glucosides which occur predominantly in the family Cruciferae, and are abundant in the Brassica vegetables.
