Immunological characterization of rapeseed myrosinase [PDF]

open access: yesEuropean Journal of Biochemistry, 1990
A purified 75‐kDa myrosinase and a crude rapeseed myrosinase fraction were used as antigens to produce mouse anti‐myrosinase monoclonal antibodies. The 75‐kDa myrosinase was also used to produce a polyclonal rabbit antiserum. The antiserum and one monoclonal antibody reacted with three distinct rapeseed polypeptides of 75, 70 and 65 kDa (M75, M70 and ...

Influence of Cabbage (Brassica oleracea) Accession and Growing Conditions on Myrosinase Activity, Glucosinolates and Their Hydrolysis Products

open access: yesFoods, 2021
Glucosinolates are secondary plant metabolites present in Brassica vegetables. The endogenous enzyme myrosinase is responsible for the hydrolysis of glucosinolates, yielding a variety of compounds, including health-promoting isothiocyanates.

Influence of sequential exogenous pretreatment and contact ultrasound-assisted air drying on the metabolic pathway of glucoraphanin in broccoli florets

open access: yesUltrasonics Sonochemistry, 2022
In this investigation, the combinations of exogenous pretreatment (melatonin or vitamin C) and contact ultrasound-assisted air drying were utilized to dry broccoli florets. To understand the influences of the studied dehydration methods on the conversion

High-level and reusable preparation of sulforaphane by yeast cells expressing myrosinase

open access: yesFood Chemistry: X, 2023
Myrosinase is a key tool for the fast and efficient preparation of sulforaphane which is one of the prominent natural ingredients found in brassicaceous vegetables.

A Simple Method for On-Gel Detection of Myrosinase Activity

open access: yesMolecules, 2018
Myrosinase is an enzyme present in many functional foods and spices, particularly in Cruciferous vegetables. It hydrolyses glucosinolates which thereafter rearrange into bioactive volatile constituents (isothiocyanates, nitriles).

Inactivation of Thioglucosidase from Sinapis alba (White Mustard) Seed by Metal Salts

open access: yesMolecules, 2020
The glucosinolates which are specialized plant metabolites of Brassica vegetables are prone to hydrolysis catalyzed by an endogenous enzyme myrosinase (thioglycoside hydrolase, thioglucosidase) that exists in Brassica plant tissue causing volatile ...

Factors Influencing Sulforaphane Content in Broccoli Sprouts and Subsequent Sulforaphane Extraction

open access: yesFoods, 2021
Broccoli sprouts contain 10–100 times higher levels of sulforaphane than mature plants, something that has been well known since 1997. Sulforaphane has a whole range of unique biological properties, and it is especially an inducer of phase 2 detoxication

Molecular Modelling of Broccoli Myrosinase and its Interaction with Different Ligands

open access: yesChemical Engineering Transactions, 2018
Myrosinase (ß-thioglucosidase glucohydrolase (EC 3.2.3.1)) is a glycoprotein responsible for the hydrolysis of glucosinolates, a group of sulfur-containing secondary metabolites present in Brassicaceae plants.

Evolutions of Components Involved in the Catabolic Pathway of Glucosinolates in Broccoli Florets during Air Drying Coupled with Air-borne Ultrasound

open access: yesShipin gongye ke-ji, 2022
In order to understand the effect of air-borne ultrasound on the catabolic pathway of glucosinolates in broccoli florets during air drying, the drying property, contents of key components (glucosinolates, sulforaphane, ascorbic acid, Fe2+ and phenolic ...

Distribution of Myrosinase in Rapeseed Tissues [PDF]

open access: yesPlant Physiology, 1991
Immunocytochemical studies on Brassica napus (rapeseed) tissues using a monoclonal antibody against myrosinase (thioglucoside glucohydrolase) showed that the enzyme was only present in a small number of cells. In the developing embryo, scattered myrosinase-containing cells were present in both cotyledons and axis.
