Ellagitannins in European oak wood: Polymerization during wood ageing
Phytochemistry, 1994Abstract Ellagitannins in acetone-water extracts of outer and inner heartwood of European oak were assayed and their M r distribution studied by gel permeation chromatography. Ageing of heartwood in the living tree induces darkening of the extract, a decrease in its solubility in cold water and polymerization of ellagitannins.

Identification of Dialkylpyrazines Off-Flavors in Oak Wood
Journal of Agricultural and Food Chemistry, 2019Volatile extractive compounds from high-quality oak wood (Quercus sp.) are responsible for important pleasant olfactory notes, such as coconut, wood, vanilla, caramel, and spice. Recently, a new off-flavor reminiscent of rancid butter has been detected in oak wood. Using gas chromatography-olfactometry (GC-O) coupled to several detection modes, such as

Drying Technology, 1995
ABSTRACT Vacuum drying, j,e drying under absolute gas pressure of about 10⊃ Pa. is an efficient means of reducing the process period and of producing good quality wood. We will examine here continuous vacuum drying where the plank surfaces are kept at a constant temperature, which remains above the boiling point, and moisture flowing to the surface is ...

Aroma Compound Sorption by Oak Wood in a Model Wine
Journal of Agricultural and Food Chemistry, 2001Oak wood used for wine barrels was immersed into a model wine containing eight aroma compounds (e.g., aromatic and terpene alcohols, ethyl esters, and aldehyde), for which activity coefficients in water and model wine were determined using the mutual solubility measurement.
