The Odor Characterizations and Interactive Olfactory Display: A Survey

2021 IEEE International Conference on Smart Internet of Things (SmartIoT), 2021
In recent years, the characterization of odor information has gained an emerging concentration. Furthermore, with the development of interactive olfactory display technology, it has become a trend that odor blenders were required to generate more types of odors.

Perceptual interactions among food odors: Major influences on odor intensity evidenced with a set of 222 binary mixtures of key odorants

Food Chemistry, 2021
This study explored the impact of perceptual interactions on the odor intensity of 222 binary mixtures designed from 72 odorants found in food products. Odor intensity was rated by 30 trained subjects. The results showed that in most cases, the components' odor was perceived within the mixture and their intensity remained the same as in the unmixed ...

Odorant-Receptor Interaction

2014
Odorant-receptor interactions constitute a key step in the olfactory detection of chemical compounds. Various studies support the combinatorial coding of olfaction, in which each odorant activates an array of odorant receptors and each odorant receptor is capable of recognizing multiple odorants, while large-scale studies involving numerous odorants ...

Color–Odor Interactions: A Review and Model

Chemosensory Perception, 2013
Certain colors are seen as corresponding to, and thus appropriate to, certain odors (e.g., red for cherry odor). When colors accompany odors, our perceptions of the odors are changed. Appropriate colors often affect our perception of the odors differently from inappropriate colors.

Analysis of Interaction in Binary Odorant Mixtures

Physiology & Behavior, 1998
An understanding of the olfactory system of any animal must account for how odor mixtures are perceived and processed. The present experiments apply associationist models to the study of how elements are processed in binary odorant mixtures. Using experimental designs for Proboscis Extension Conditioning of honey bees, I show that learning about a pure

The role of congruency in taste–odor interactions

Food Quality and Preference, 2014
Abstract The present study investigated the role that congruency between tastes and odors plays in two types of taste–odor interactions: retronasal odor enhancement by taste and retronasal odor referral to the mouth. In the first experiment, subjects rated (1) the intensities of sweetness, sourness, bitterness, and specific odor of aqueous samples of

Interactions between food matrices and odorants: A review

Food Chemistry
Currently, although odorants of various foods have been thoroughly studied, the regulation of food aromas is still difficult due to the interaction between odorants and food matrices. These complex matrices in food may interact with odorants to change the volatility of odorants, which in turn affect food aroma.

Odor interactions and learning in a model of the insect antennal lobe

Neurocomputing, 2004
Abstract We present a new model of insect antennal lobe in the form of integro-differential equation with short-range inhibition. The learning in the model modifies the odor-dependent input by adding a term that is proportional to the firing rates of the network in the pre-learning steady state.

Taste and odor interactions after metabolic surgery

Chemical Senses
Abstract Most patients report “taste” changes after undergoing metabolic surgeries. Yet, most studies that used validated sensory evaluation techniques, including ours, found no changes in perceived taste intensity from before to after surgery.

Interactive Odor Playback Based on Fluid Dynamics Simulation

2009 IEEE Virtual Reality Conference, 2009
This article describes the experiments on an interactive application of an olfactory display system into which computational fluid dynamics (CFD) simulation is incorporated. In the proposed system, the olfactory display is used to add special effects to movies and virtual reality systems by releasing odors relevant to the scenes shown on the computer ...
