Extending Soya Bean and Cottonseed Oils Shelf‐Lifes by Blending Them With Palm Kernel Oil During Frying of Potato Chips

open access: yesFuture Postharvest and Food, Volume 3, Issue 2, Page 234-250, June 2026.
Blending soya bean and cottonseed oils with palm kernel oil at ratios 50:50, 40:60, and 30:70 significantly increase their oxidative stability during frying of potato chips compared to soya bean oil and cottonseed oil alone. ABSTRACT Unsaturated oils have limited applications due to their instability. The industry uses hydrogenation and antioxidants to

Assessing Water Solubility of Ester‐Based Oils and Unravelling Their Mechanisms by a Quantitative Model

open access: yesHigh Voltage, Volume 11, Issue 3, Page 797-810, June 2026.
ABSTRACT Moisture is a sensitive issue for transformer oils, as it adversely affects the stability of insulation papers and dielectric strength of the oils. However, the lack of a quantitative model makes it challenging to evaluate the water solubility of ester‐based oils, which is an undesirable restriction for developing novel ester‐based oils ...

The Effect of Polyglycerol Esters of Fatty Acids on the Crystallization of Palm Olein

open access: yesJournal of Oleo Science, 2021
This research investigated the effect of polyglycerol ester of fatty acids (PGE) on the crystallization of palm olein (POL). Three PGEs were studied: two solid-state PGEs (PGE1105 and PGE1117) and one liquid-state PGE (PGE1155). The addition of 0.5-5% wt.

Lipase Stability in Structured Lipid Synthesis: The Interplay of Substrate Characteristics and Strategies to Improve Its Operational Performance—A Critical Review

open access: yesJournal of Food Science, Volume 91, Issue 6, June 2026.
ABSTRACT Structured lipids (SLs) have attracted growing industrial interest due to their associated health benefits. Lipases, as highly selective and versatile biocatalysts, are central to the sustainable synthesis of SLs attributed to their ability to operate under mild reaction conditions. However, the limited operational stability of lipases remains
