Enhancing phytochemical composition and nutritional profiles in dry bean varieties through roasting

open access: yesJournal of the Science of Food and Agriculture, EarlyView.
Abstract BACKGROUND Dry beans and chickpeas are nutritionally valuable legumes widely consumed worldwide. This study examines the impact of oven roasting (110 °C for 70 min) on the phytochemical, antioxidant, fatty acid and saponin profiles of 12 pulses, including 11 common beans and 1 chickpea. RESULTS Roasting significantly affected the phytochemical

Cashew Nut Oil Improves Lipid Metabolism and Fat Liver Deposition in High‐Fat Diet‐Fed C57BL/6J Mice

open access: yesLipids, EarlyView.
Thirty C57BL/6J mice were fed a high‐fat diet for 12 weeks to induce metabolic changes. They were then switched to diets containing cashew nut oil, soybean oil, or lard for another 12 weeks. Soybean oil reduced blood glucose, total cholesterol, LDL cholesterol, triglycerides, and liver steatosis.

Synthesis of Heterotelechelic Poly(N‐ethylglycine) Polymers: from Polypeptoid Lipid Conjugates to Protein‐Polymer Conjugates

open access: yesMacromolecular Rapid Communications, EarlyView.
Defined for conjugation. We report the synthesis of heterotelechelic poly(N‐ethylglycine) (pNEtGly) via acid‐catalyzed polymerization of high‐purity NCA monomers. The resulting polymers exhibit excellent end‐group fidelity and enable well‐defined, high‐purity protein and lipid conjugates.
