Pancreatin is an aqueous extract of fresh beef or hog pancreas. It has varying degrees of proteolytic, lipolytic and diastatic activity depending on how far it has been purified. The enzymes of pancreatic extracts are most active at 50°C at a pH between 7.5 and 9.0. When dried they remain stable indefinitely under ordinary storage conditions.

Journal of the American Pharmaceutical Association (Scientific ed.), 1951A simple method of preparing pancreatin with high lipase content is outlined. An analysis, by 50 independent workers, of the pancreatin prepared by this method shows that it contains also over three times the amount of trypsin and of amylase required by the U. S. P. Thus it is an easily prepared “triple strength” pancreatin of high lipase content.
