ABSTRACT Despite a high sucrose accumulation in its taproot vacuoles, sugar beet (Beta vulgaris subsp. vulgaris) is sensitive to freezing. Earlier, a taproot‐specific accumulation of raffinose was shown to have beneficial effects on the freezing tolerance of the plant.
