Arrested coalescence in Pickering emulsions
Soft Matter, 2011When two emulsion drops begin to coalesce, their complete fusion into a single spherical drop can sometimes be arrested in an intermediate shape if a rheological resistance offsets the Laplace pressure driving force. Arrested coalescence of droplets is important, both for its broad impact on commercial food production as well as its potential for ...

CHAPTER 7. Complex Pickering Emulsions
2014Many Pickering emulsions are simple spherical emulsions because surface tension gives liquid droplets a spherical shape, minimizing the surface area for a given volume. However, supracolloidal systems with complex structures have been produced to create new materials, such as multiple emulsions, non-spherical emulsions and bicontinuous structures.
