Se determinaron las isotermas de adsorción de humedad en pitahaya amarrilla a 15, 25, y 35ºC mediante el método gravímetro en el intervalo de actividad de agua (aw) entre 0.111 y 0.901. Los valores experimentales de adsorción se ajustaron mediante los modelos de GAB, BET, Henderson, Smith, Caurie, y Peleg.
