Optimized Infrared Vacuum Drying of Bananas for High‐Quality Products

open access: yesJournal of Food Process Engineering, Volume 48, Issue 11, November 2025.
Infrared vacuum drying (IVD) was optimized for bananas, achieving high product quality and significantly lower energy consumption compared to freeze vacuum drying. The optimal IVD conditions—432 W power, 3 mm thickness, green ripeness, and 90 min drying—produced the best balance of moisture reduction, sensory quality, and energy efficiency.
