Colour descriptors for plant-based milk alternatives discrimination [PDF]

Colour characteristics of plant-based milk alternatives (PBMAs: almond, coconut, cashew, oat, soy) were monitored during long-term storage to select suitable descriptors for PBMAs differentiation.
