Phenolic Profiles, Antioxidant Properties and Predicted Glycaemic Index of Bread Sweetened With Date Syrup in Comparison With Granulated Sugar

Date syrup are used as sweetener in bread. Bread with date syrup had superior phenolic composition, better antioxidant properties and carbohydrate hydrolysing enzymes while bread with granulated sugar had higher predicted glyceamic index. Comparative Analysis of Fungal Communities and the Key “Golden‐Flower” Fungi in Fu Brick Tea From Seven Chinese Regions and Their Effects on the Quality of Summer‐Autumn Tea

This study systematically investigated 52 Fu brick tea (FBT) samples collected from seven representative regions in China. High‐through put sequencing revealed that Aspergillus, Wallemia, and Candida were the predominant fungal genera across the samples.

The Protective Effects of Membrane‐Separated Ripe Pu‐Erh Tea Extracts Against Chronic Alcoholic Liver Injury

In this study, we investigated the protective effects of different membrane‐separated ripe Pu‐erh tea on alcohol‐induced liver injury. The result indicated that ripe Pu‐erh tea separated by a 50 nm ceramic membrane (molecular weight < 300 kDa) has the best effect on preventing ALD.

Peach Kernel Oil Modulates Lipid Metabolism Disorder in ApoEa CRISPR/Cas9 Gene‐Disrupted Zebrafish

In this study, we used CRISPR/Cas9 gene editing technology to establish a lipid metabolism disorder model of ApoEa mutant zebrafish. We applied peach kernel oil to this model and studied the mechanism of peach kernel oil regulating lipid disorder in combination with transcriptomics.
