Oxidative rancidity of vegetable oils in the presence of α-tocopherol
The oxidative rancidity of olive oil, sunflower oil and sunflower oil high in oleic acid in the presence of α-tocopherol has been studied. The influence of temperature, antioxidant concentration and unsaturation degree on the peroxidation of these oils ...

Hypericum perforatum ethanolic extract (HPEE) at the levels of 0, 150, 300 and 450 mg/kg were used and dietary treatments did not affect growth performance including feed intake, body weight and feed conversion ratio. The HPPE reduced the abdominal fat and improved meat quality in broilers.

ABSTRACT A global shift from diets rich in animal‐based products toward plant‐based diets has been widely promoted as a key strategy for creating more sustainable food systems. However, the adoption of plant‐based alternatives depends on multiple factors, including consumer preferences, sensory quality, product affordability, and availability, in ...

ABSTRACT Edible insects are increasingly recognized for their high nutritional value and favorable environmental profile, yet their acceptance (defined as the continuum from willingness to try and purchase to repeated consumption) in Western and globalized food systems remains limited by cultural, sensory, regulatory, and economic barriers.

ABSTRACT The global prevalence of iron (Fe) deficiency anemia (IDA) continues to pose major public health challenges, necessitating the development of effective fortification strategies. Dairy‐based systems are promising vehicles for Fe fortification and delivery due to their widespread consumption and nutritional value, although their complex matrix ...

From Yield to Flavor: The Role of Lipid Coatings in Beef Aging
ABSTRACT Lipid‐coated aging has been proposed as an alternative to enhance flavor, particularly using butter as a coating material (butter‐aged beef). Thus, this study compared the wet‐aged and beef‐aged with different lipid‐based coatings: milk butter (butter‐aged), cocoa butter (cocoa‐aged), pork lard (lard‐aged), and beef tallow (tallow‐aged), all ...

LLM‐Assisted Topic Modelling for Hate Speech Characterization
ABSTRACT In the digital era, the internet and social media have transformed communication but have also facilitated the spread of hate speech and disinformation, leading to radicalization, polarisation and toxicity. This is especially concerning for media outlets due to their significant role in shaping public discourse. This study examines the topics,

STUDIES ON RANCIDITY OF BUTTERFAT. PART X. THE INFLUENCE OF OXYGEN CONCENTRATION ON RANCIDITY
The effect of pressure of oxygen on the development of rancidity is comparatively insignificant. Relatively small amounts of dissolved oxygen present in fats and oils exert a strong influence on the rancidity. Rancidity by the formation of peroxides of the unsaturated glycerides proceeds in a limited supply of oxygen.

Application of ATR-FTIR for Green Arabica Bean Shelf-Life Determination in Accelerated Storage
Coffee bean oxidation is associated with enzymatic and non-enzymatic browning, the degradation of desirable aromatic compounds, the development of undesirable flavors, increased susceptibility to microbial spoilage, and volatile compound losses.
