In this study, the total protein content and 10‐hydroxy‐2‐decenoic acid content were determined in royal jelly collected at the 72 and 144 h. In vitro bioaccessibility, antibacterial, and antidiabetic properties of royal jelly collected at the 72 and 144 h were also determined. This study examined the variation in salivary nitric oxide (NO), alpha-amylase (sAA) and serum markers of muscle injury during 21 weeks of training in elite swimmers. Samples of saliva and blood were collected once a month during 5 months from 11 male professional athletes during their regular training season.

The independent variables influenced the oral processing of corn snacks, and temporality had a low importance in characterizing them. The sunflower oil content had little impact on their sensory profile, suggesting that low sunflower oil content may be sensorially acceptable, contributing to improved nutritional value of corn snacks.
