Neravnoteža između oksidansa i antioksidansa u korist oksidansa, potencijalno dovodi do nastanka stanja koje se naziva “oksidacijski stres”. U stanju oksidacijskog stresa koncentracije visokoreaktivnih slobodnih radikala su povećane te prouzroče metaboličke poremećaje i oštećenja biološki važnih molekula (bjelančevina, masti, ugljikohidrata i DNK).
