Proteolysis in soft cheese, studied on Meshanger cheese and cheese models

open access: yes
Enzymes predominantly responsible for the primary degradation of protein in soft cheese and for the related changes in consistency were studied. Reconstructed Noordhollandse Meshanger cheese and preserved simulated soft cheeses of different composition were used as models in the investigation.

Solid‐State Fermentation of Legumes: Multi‐Scale Structural Modifications to Unlock Techno‐Functional Properties

open access: yesComprehensive Reviews in Food Science and Food Safety, Volume 25, Issue 6, November 2026.
ABSTRACT Legumes are increasingly used as functional ingredients in plant‐based foods. However, their compact endogenous structure restricts techno‐functional properties. Conventional fractionation methods that isolate proteins further impair these properties and generate co‐products.

KOMBREAD, Kombucha as a Functional Starter for Sourdough Bread: Physicochemical Properties, Microbiological Characterization, and Quality Evaluation

open access: yesFood Science &Nutrition, Volume 14, Issue 10, October 2026.
Kombucha can be used as a microbial starter to accelerate sourdough fermentation, reducing maturation time from 10–14 days to about 5 days. The resulting bread maintains comparable texture, structure, and sensory qualities to traditional sourdough while offering enhanced functional benefits, including higher phenolic content and antioxidant capacity ...

Transhumance as a Prism. Toward a Planetary Rural Geography of Mountain Space

open access: yesGeography Compass, Volume 20, Issue 10, October 2026.
ABSTRACT Transhumance is a marginal—yet crucial—practice within mountain and rural geographies at a global scale. The term refers to a wide range of extensive grazing systems characterized by the seasonal movement of herds and flocks between different altitudes, within diverse governance systems.
