본 연구는 spirulina의 건강보조 식품으로서의 영양적 기능을 규명하기 위한 기초연구로서 spirulina 단백질의 소화율과 spirulina 첨가 식이가 흰쥐의 성장과 지질 대사에 미치는 영향을 알아보고자 수행되었다. Spirulina단백질은 양과 질이 모두 우수하다고 보고되고 있으므로 이 단백질의 생체 내 이용율을 알아보기 위하여 소화율을 측정하였다.
