Cool Kitchen: Processing Starch and Eggshell Powder into Sustainable Coatings for Passive Daytime Cooling

open access: yesAdvanced Functional Materials, EarlyView.
A food‐grade cooling composite made from starch and recycled eggshell powder offers a scalable, ultra‐low‐cost solution for passive daytime radiative cooling. Easily prepared using basic kitchen tools, this material empowers communities, even in areas with limited infrastructure, to stay cooler during worsening summer heat waves.

Structural and physicochemical properties of rice starch from a variety with high resistant starch and low amylose content

open access: yesFrontiers in Nutrition
Research on the physicochemical properties of rice-derived endo-sperm high resistant starch (RS) with low amylose content (AC) is limited. In this study, we evaluated the physicochemical characteristics of such a starch variety and revealed that the ...

Influence of Mucilage Viscosity On The Globule Structure And Stability Of Certain Starch Emulsions [PDF]

open access: yes, 2005
A study was carried out to determine the influence of mucilage viscosity on the globule structure (i.e. size and number) of certain starch emulsions. The starches investigated were cassava, potato and maize.

Starch molecular structure and diabetes

open access: yesCarbohydrate Polymers
Starch is a primary source of food energy for human beings. Its chain-length distribution (CLD) is a major structural feature influencing physiologically-important properties, such as digestibility and palatability, of starch-containing foods. Diabetes, which is of epidemic proportions in many countries, is related to the rate of starch digestion in ...

Tailoring the Properties of Functional Materials With N‐Oxides

open access: yesAdvanced Functional Materials, EarlyView.
The properties of materials bearing N‐oxide groups are often dominated by the polar N+─O− bond. It provides hydrophilicity, selective ion‐binding, electric conductivity, or antifouling properties. Many of the underlying mechanisms have only recently been discovered, and the interest in N‐oxide materials is rapidly growing.

Changes in structure and aroma release from starch-aroma systems upon α-amylase addition [PDF]

open access: yes, 2018
The influence of starch hydrolysis by α-amylase addition on structural properties and aroma release from starch-aroma systems was studied. A food model system composed of aqueous tapioca starch dispersion (4g dry starch/100g dispersion) and one aroma ...
