Effect of a combination of enzymes on the fundamental rheological behavior of bread dough enriched with resistant starch [PDF]

open access: yes, 2016
The effect of three enzymes on the fundamental rheological parameters of bread dough with high content of resistant starch (RS) was studied. The RS was added as an alternative to increase the fiber ingestion while the enzymes, to overcome the gluten ...

Nutritional and functional properties changes during facultative submerged fermentation of gadung (Dioscorea hispida Dennst) tuber flour using Lactobacillus plantarum

open access: yesHeliyon, 2020
This work aims to examine the influence of flour concentrations (5%–25% w/v), inoculum loading (2.5%–15% v/v), and fermentation time (0–144 h) on the nutritional and functional properties of gadung (Dioscorea hispida Dennst) tuber flour.

Sustainable Catalyst‐Free PLG Networks: Recyclability, Biodegradability, and Functional Performance

open access: yesAdvanced Functional Materials, EarlyView.
A catalyst‐additive free covalent adaptable network is developed from star‐shaped poly(lactide‐co‐glycolide) cross‐linked with pyromellitic dianhydride, enabling internal carboxylic acid‐driven transesterification. The resulting biodegradable network exhibits mechanical robustness (Young's modulus ≈1.6 GPa), complete recyclability, rapid biodegradation

Agro-waste: a potential fermentation substrate for Penicillium chrysogenum [PDF]

open access: yes, 2009
Common agro-wastes found in Lagos, Nigeria (cassava shavings, corncob, sawdust, and sugarcane pulp) were compared with glucose and lactose as fermentation substrates for Penicillium chrysogenum PCL501.

Fermentative production and optimization of mevastatin in submerged fermentation using Aspergillus terreus

open access: yesBiotechnology Reports, 2015
The main objective of the study is to enhance the mevastatin production using Plackett-Burman (PB) and central composite design (CCD) by Aspergillus terreus in submerged fermentation (SmF). Eight nutrients were chosen for a PB design with 12 experimental runs. A maximum mevastatin production of 170.4 mg L-1 was obtained in PB design.

Coagulative Granular Hydrogels with an Enzyme Catalyzed Fibrin Network for Endogenous Tissue Regeneration

open access: yesAdvanced Healthcare Materials, EarlyView.
Coagulative granular hydrogels are composed of packed thrombin‐functionalized microgels that catalyze the conversion of fibrinogen into a secondary fibrin network, filling the interstitial voids. This bio‐inspired approach stabilizes the biomaterial to match the robustness of bulk hydrogels without compromising injectability, mimicking the initial ...

PENGARUH METODE FERMENTASI SUBSTRAT PADAT DAN SUBSTRAT TERENDAM PADA BIJI SORGUM TERHADAP KUALITAS TEPUNG

open access: yesJurnal Teknologi dan Industri Pangan, 2016
The utilization of sorghum as food products is restricted by its lack of digestibility and the presence of anti-nutrients factors. Fermentation process has been recommended to improve cereal-based flour quality.

Lignocellulose as raw material in fermentation processes [PDF]

open access: yes, 2010
Lignocellulose in the form of forestry, agricultural, and agro-industrial wastes is accumulated in large quantities every year. These materials are mainly composed of three groups of polymers, namely cellulose, hemicellulose, and lignin.
