Flavor enhancement of food as a stimulant for food intake in elderly people
It is often speculated that the age related decline in taste and smell performance can add to the decreased food intake among elderly by causing a change in liking of food.

A dual‐additive electrolyte strategy is developed to address the hydrolysis of I+ in the aqueous electrolytes. The steric‐hindrance effect of TES− effectively shields I+ from nucleophilic attacks by hydroxyl groups, facilitating the reversible I−/I0/I+ conversion with four‐electron transfer.

PERCEPTION AND ACTION: THE TASTE TEST
Traditional accounts of perception endorse an input–output model: perception is the input from world to mind and action is the output from mind to world. In contrast, enactive accounts propose action to be constitutive of perception.

Transducers convert physical signals into electrical and optical representations, yet each mechanism is bounded by intrinsic trade‐offs across bandwidth, sensitivity, speed, and energy. This review maps transduction mechanisms across physical scale and frequency, showing how heterogeneous integration and multiphysics co‐design transform isolated ...

Flavour perception: aroma, taste and texture interactions
Flavour perception is determinant for the acceptability of food products by consumers. Aroma and taste play an important role in flavour perception and it is well known that the chemical composition of the matrix and consequently its structure influences
