Characterisation of a cold‐adapted, thermostable glucokinase from psychrophilic Pseudoalteromonas sp. AS‐131 reveals how the enzyme achieves high thermal stability without loss of cold adaptation

We investigated glucokinase from the psychrophilic Pseudoalteromonas sp. AS‐131 (PsGK), which was isolated from the Antarctic Ocean. Biochemical studies revealed that PsGK is a cold‐adapted enzyme with high thermal stability, in contrast to general cold‐adapted enzymes, which have low thermal stability.

Abstract The food enzyme arabinan endo‐1,5‐α‐l‐arabinanase (5‐α‐l‐arabinan 5‐α‐l‐arabinanohydrolase; EC 3.2.1.99) is produced with the non‐genetically modified Aspergillus tubingensis strain GPA41 by Shin Nihon Chemical Co., Ltd. The food enzyme was considered free from viable cells of the production organism.

Abstract The food enzyme glucan 1,4‐α‐glucosidase (4‐α‐d‐glucan glucohydrolase; EC 3.2.1.3) is produced with the genetically modified Aspergillus niger strain NZYM‐BF by Novozymes A/S. The safety of this food enzyme was evaluated previously and it did not give rise to safety concerns when used in two food manufacturing processes.
