Influence of frying conditions on quality attributes of frying oils: Kinetic investigation of polar compounds

open access: yesFood Chemistry: X
Polar compounds are complex, heterogeneous substances associated with various chronic diseases. In this study, we applied kinetic models to characterise the formation of total polar compounds (TPC), triacylglycerol oligomers (TGOs), triacylglycerol ...

Influence of fatty acid composition on the formation of polar glycerides and polar fatty acids in sunflower oils heated at frying temperatures.

open access: yesGrasas y Aceites, 1997
Conventional and high oleic sunflower oils as well as 50% mixture of both of them were heated at different temperatures under well-controlled conditions. Total polar compounds, the main groups of polar glycerides, total polar fatty acids, the main groups

Assessment of New TLC Method for Measuring Total Polar Compounds in Deteriorated Oils.

open access: yesJournal of Oleo Science, 2001
A new TLC method (3M PCT120) to measure the amount of polar compounds in deteriorated frying oil was developed and launched in Europe. In the new method, a specific dye spotted on a thin layer silica gel plate moves up in proportion to the amount of polar compounds in deteriorated frying oil which is used as a developing solvent.

Optimization of Total Polar Compounds Quantification in Frying Oils by Low-field Nuclear Magnetic Resonance

open access: yesAnalytical Sciences, 2019
To improve the accuracy of total polar compounds (TPC) quantification in frying oils by low-field nuclear magnetic resonance (LF-NMR), an optimized statistical method was proposed. The method uses a specially designed sequence to detect the NMR signal in frying oils, and establishes the TPC prediction model by partial least squares (PLS) regression on ...

Calibration of a microporous polyethylene tube passive sampler for polar organic compounds in wastewater effluent

open access: yes, 2023
Water resources are vulnerable to contamination from polar organic compounds (POCs) originating from sources such as wastewater effluent. Two configurations of a microporous polyethylene tube (MPT) passive sampler were investigated for the time ...
