The tannins of lentil seed coat were extracted and purified, allowed to interact with isolated lentil albumin and casein and studied turbidimetrically. The interactions of lentil albumin and casein with tannin at various tannin-to- protein ratios proved to be pH-independent and pH-dependent, respectively.
