Non-Vanillin Vanilla Volatiles in Vanilla Extract
Abstract The flavors of vanilla extract may be made stronger by the artful addition of volatile chemicals. This method detects these additions by gas chromatography at levels down to 10 ppm. The volatiles are extracted with isopentane, which is then concentrated to 0.2-0.5 ml, at which point vanillin is precepitated before chromatography.
