The Impact of Pyropheophytin a (PPP) and 1,2‐Diacylglycerols (DAGs) on Extra Virgin Olive Oil Quality and Shelf Life

open access: yesJournal of the American Oil Chemists' Society, EarlyView.
ABSTRACT The quality and shelf life of extra virgin olive oil (EVOO) are pivotal to its marketability and consumer satisfaction. This study evaluated how pyropheophytin a (PPP) and 1,2‐diacylglycerols (DAGs) changed for different varieties of EVOO over a 24‐month storage period under varying temperature conditions (16°C, 18°C, and 20°C).

Comparison of Methods for the Preparation of Fatty Acid Methyl Esters for the Analysis of Omega‐3 Rich Oils by Gas Chromatography

open access: yesJournal of the American Oil Chemists' Society, EarlyView.
ABSTRACT Fatty acid analysis is required in a wide range of industries, and conversion to fatty acid methyl esters followed by gas chromatography is by far the most common method of analysis. However, despite widespread use, there is no consensus on which derivatization method should be used or how the methods compare.

Physicochemical, Rheological, and Sensory Properties of Low‐Fat Mayonnaises Formulated With Flaxseed Oil‐Based Sunflower and Whale Wax Oleogels

open access: yesJournal of the American Oil Chemists' Society, EarlyView.
In this study, low‐fat, carbohydrate‐free mayonnaise samples based on flaxseed oil–wax oleogels were successfully developed and analyzed. ABSTRACT This study aimed to prepare and characterize low‐fat mayonnaises containing 50% of total weight as fat by incorporating oleogels based on sunflower wax–flaxseed oil (SWO‐M) and whale wax–flaxseed oil (WWO‐M).
