ABSTRACT Import demand and trade studies often rely on aggregate Harmonised System data, which could result in aggregation bias and erroneous policy inference. We examine the demand for imported beef in Japan using more detailed trade data that accounts for source (e.g., Australia, United States) and primal cut (e.g., chuck, brisket, loin).

Association of leptin gene polymorphism with growth in crossbred cattle through PCR-RFLP analysis [PDF]
Efforts to enhance cattle productivity often involve strategic crossbreeding and selection methods. This study investigates the relationship between leptin gene polymorphism and growth characteristics in crossbred cattle, which is crucial for improving ...

ABSTRACT Detecting selection footprints offers valuable insight into evolutionary processes and the mechanisms underlying phenotypic diversity in selected traits. Domestication, natural and artificial selection, and breeding have produced indigenous goats well‐adapted to their local environments, making them crucial genetic resources. Understanding the

ABSTRACT Finishing of dairy‐origin calves in an accelerated ‘New generation beef’ (NGB) beef finishing system for slaughter up to 14 months of age has potential co‐sector benefits. These include production efficiencies and a reduced number of dairy calves slaughtered at a very young age.

Effect of Wagyu genetics on marbling, backfat and circulating hormones in cattle
Backfat depths, marbling scores, and concentrations of plasma insulin, cortisol, triiodothyronine (T3), and thyroxine (T4) were determined in 394 calves with and without Wagyu genetics.

ABSTRACT Dry‐aged beef is valued for its tenderness, complex aroma, and concentrated flavor. However, variability in aging protocols and limited understanding of underlying biological and technological processes can compromise consistent quality and safety.

Taste enhancement in Japanese black Wagyu (JBW) beef fed with Sake Lees: Feeding sake lees (SL) to JBW cattle altered beef metabolite profiles, as revealed by metabolomics and taste sensor analysis. Elevated glucose 1‐phosphate and amino acids were associated with enhanced sweetness, consistent with sensory evaluation.

Traditional analyses of a QTL on Bota 19 implicate a surfeit of candidates, but each is of marginal significance in explaining the deposition of healthy, low melting temperature fat within marbled muscle of Wagyu cattle.

ABSTRACT The objective of this study was to compare the effects of dry aging by conventional (28 days aged; NF28d) and accelerated (frozen/thawed and 14 days aged; FT14d) processes on the sensory and chemical (fatty acids, FA; volatile organic compounds, VOC; and amino acids; AA) profiles of striploins from Nellore and crossbreed F1 Angus × Nellore ...
