The action of rennet on whole milk
Journal of Dairy Research, 1969SummaryThe release, by the action of rennet, of peptides which are soluble in trichloroacetic acid (TCA) has been studied using milk samples from individual cows. This release showed an initial marked increase with time of rennet action. After the milk clotted there was no further increase for at least 30 min.

Ultrafiltration of Whole and Skim Milk

Comparison of an adapted milk with whole cows milk.
The New Zealand medical journal, 1980Two groups of babies, one having SMA, one homogenised milk, were studied. Haemoglobin was measured in the neonatal period, and at 3, 6, 10 1/2 and 15 months. Five babies of the homogenised milk group became anaemic. Stools were tested for occult blood, with more strongly positive test results found in babies having homogenised milk.

The Viscosity of Whole Milk Concentrates
1986Whole milk was concentrated by ultrafiltration to the concentration levels of 1, 3, 4, 4.5 and 5 times the original concentration. The viscosity of the different concentrates was measured as a function of the temperature (temperatures from 20°C to 50°C) and as a function of the pH-value (pH-values from 5.2 to 6.7) at a shear rate of 466 s-1.
