COLORIMETRIC CHARACTERIZATION OF EGG YOLK AND EGG YOLK PRODUCTS
Journal of Food Science, 1973Procedures are suggested for COLOR‐EYE® evaluation of various yolk forms and products. Chromaticity coordinates derived from COLOR‐EYE determinations and the calculated dominant wavelength (λd), excitation purity (Pe) and luminous reflectance (YCIE) values were also determined for each yolk form and product analyzed.

Pyrite (FeS2) is an attractive anode material for sodium-ion batteries (SIBs) with a high theoretical capacity of 894 mAh g−1. However, its practical application is greatly hindered by the rapid capacity fading caused by the large volume expansion upon ...

Surface Activity of Yolk, Plasma and Dispersions of Yolk Fractions
Journal of Food Science, 1966SUMMARYUndiluted yolk, plasma, and a 4.8% livetin solution had surface tensions of about 44 dynes/cm and interfacial tensions of around 5 dynes/cm. Extensive dilution of the yolk and plasma with either water or 10% NaCl did not bring about marked decreases in the activity of the surfaces. Rehydrated dried yolk had surface energy values similar to those

ABSTRACT Eggs of some archaic fishes, such as Polypterus, sturgeon or the holosteans, resemble amphibian eggs. Not only has the similarity been found in the amount of yolk (mesolecithal types of eggs), which indicates the manner of egg cleavage (holoblastic) in these vertebrates, but also in the morphological composition of yolk.
