Structural Characterization of α-Zein

Journal of Agricultural and Food Chemistry, 2005
A variety of published physical measurements, computational algorithms, and structural modeling methods have been used to create a molecular model of 19 kDa alpha-zein (Z19). Zetaeins are water-insoluble storage proteins found in corn protein bodies. Analyses of the protein sequence using probability algorithms, structural studies by circular dichroism,

Impacts of ethanol-plasticization and extrusion on development of zein network and structure of zein-starch dough

Food Chemistry, 2023
To improve the viscoelasticity of zein in gluten-free dough, ethanol-plasticization and extrusion modification were employed. The peak viscosity of UZS (unextruded zein-starch) flour and EZS (extruded zein-starch) flour with ethanol (10 %, v/v) increased from 1340.0 to 1996.5 mPa·s and 1336.3 to 2291.5 mPa·s, and the bound bromophenol blue increased ...

Production of Textile Fibers from Zein and a Soy Protein‐Zein Blend

Cereal Chemistry, 1997
ABSTRACTZein fibers were successfully prepared by a wet‐spinning technique from a zein suspension formulated with 15% zein, 60% water, 22% 0.4N sodium hydroxide, and 3% urea by weight. Tenacities were measured with an Instron machine, and flexibility was determined by noting the smallest diameter rod around which a fiber could be looped without ...

Adsorption of Zein on Surfaces with Controlled Wettability and Thermal Stability of Adsorbed Zein Films

Biomacromolecules, 2007
Adsorption characteristics of zein protein on hydrophobic and hydrophilic surfaces have been investigated to understand the orientation changes associated with the protein structure on a surface. The protein is adsorbed by a self-assembly procedure on a monolayer-modified gold surface.

Acetylation of Zein Fibers

Textile Research Journal, 1947
The acetylation of zein fibers increased the water-resistance, improved the softness of the fiber by moderation of the severe formaldehyde post-cure, improved the boil-resistance, whitened the fiber by removal of pigments, and decreased the dye uptake. Acetylation was accomplished with acetic anhydride, with sodium acetate or sulfuric acid as catalyst.
