Targeted Metabolomics Reveals Tissue‐Specific Accumulation and Translocation of Bioactive Compounds in Ginger During Growth

Targeted UHPLC–MS/MS methods were established to quantify 32 bioactive compounds in ginger leaves, stems, and rhizomes during growth. Development and Quality Evaluation of Fiber‐Enriched Pasta Incorporating Green Banana Flour and Whole Wheat Flour: Physicochemical, Antioxidant, and Sensory Properties

This study developed fiber‐enriched pasta by incorporating green banana flour and whole wheat flour and evaluated its nutritional, physicochemical, antioxidant, and sensory properties. Enrichment increased protein, dietary fiber, calcium, and iron contents, while DPPH radical‐scavenging activity reached 95.7%.

Shiso (Perilla frutescens var. crispa) Increases Subjective Pleasantness of Steamed Rice With an Enhanced Sulfur‐Odor
