PQQを酢酸発酵の培地に添加することによって, 発酵は著しく促進された。既に知られているようにPQQは誘導期を短縮して酢酸菌の生育を促進する生理活性を有しており, そのPQQの添加によって菌の生育が促進される結果として, 酢酸生成に関与するアルコール脱水素酵素及びアルデヒド脱水素酵素の生成が速められた。そのためにエタノールの急速な酸化がおこって, 酢酸発酵が促進された。このように, 酢酸発酵の促進にはPQQを培地に添加することはたいへん有効な手段であり, 発酵期間を大幅に短縮することができた。これは食酢醸造における種酢の節減が可能であることを示し, そのために生産性の飛躍的な向上を期待させるものであろう。グリセリンは, 酢酸菌の良好な炭素源として菌体の形成に役立つことで ...
