Combined Effect of Dietary Protein, Ractopamine, and Immunocastration on Boar Taint Compounds, and Using Testicle Parameters as an Indicator of Success

open access: yesFoods, 2020
This study investigates the combined effect of immunocastration, dietary protein level (low, medium or high) and ractopamine hydrochloride supplementation (0 or 10 mg/kg) on the adipose concentrations of androstenone, skatole and indole in pigs, and ...

Olfactory perception of 5α-androst-16-en-3-one: Data obtained in the residents of central Russia

open access: yesData in Brief, 2022
This dataset describes olfactory perception of androstenone (5α-androst-16-en-3-one) in residents of central Russia (n=807, 9-84 years old). Based on previous studies, 3.13 × 10−3% androstenone was utilized for sensory testing. A modified two-alternative

Consumer animal welfare and healthy perception of fresh sausages’ fiber fat replaced and elaborated with meat from non‐castrated male pigs

open access: yesFood Science &Nutrition, Volume 12, Issue 9, Page 6720-6734, September 2024.
Entire male pork sausages reduced in fat and with vegetable fiber are positively perceived by consumers. Reduced‐fat entire male pork sausages with vegetable fiber can be an option for marketing this meat. Consumers consider castration to be justified if it improves the sensory perception of entire male pork.

Pig meat quality from entire males

open access: yesAnimal, 2009
This paper constitutes an updated review of the production and meat quality aspects of rearing entire male pigs. Since a major obstacle in rearing entire males is the incidence of boar taint, possible methods for detection are also summarised.

Genetic and metabolic aspects of androstenone and skatole deposition in pig adipose tissue: A review (Open Access publication)

open access: yesGenetics Selection Evolution, 2008
High levels of androstenone and skatole in fat tissues are considered the primary causes of boar taint, an unpleasant odour and flavour of the meat from non-castrated male pigs.

Developing and Understanding Olfactory Evaluation of Boar Taint

open access: yesAnimals, 2020
Trained expert panels are used routinely in boar taint research, with varying protocols for training of panelists and scoring methods. We describe a standardized process for training and scoring, to contribute to standardize the olfactory detection of ...

Roles of the main olfactory and vomeronasal systems in the detection of androstenone in inbred strains of mice

open access: yesCurrent Zoology, 2010
We investigated the role of the main olfactory and accessory olfactory systems (MOS and AOS respectively) in the detection of androstenone. We used the following experimental approaches: behavioral, surgical removal of the vomeronasal organ (VNX ...

Effect of faecal soiling on skatole and androstenone occurrence in organic entire male pigs

open access: yesAnimal, 2015
Production of entire male pigs could be a future strategy for organic pig production. However, production of entire males leads to increased risk of carcasses with elevated boar taint levels.

Biochemical, nutritional and genetic effects on boar taint in entire male pigs

open access: yesAnimal, 2009
Pork odour is to a great extent affected by the presence of malodorous compounds, mainly androstenone and skatole. The present review outlines the current state of knowledge about factors involved in the regulation of androstenone and skatole in entire ...

Patterns of plasma sexual steroids in Duroc and Pietrain crossbred male pigs in organic farming and prediction of boar taint risk according to slaughter weight

open access: yesAnimal
Boar taint risk in pork highly depends on fat tissue concentrations of androstenone and skatole, and indole to a lower extent. During pubertal development, androstenone is increasingly produced by testes and accumulates in fat tissues. Skatole and indole
