Entire male pork sausages reduced in fat and with vegetable fiber are positively perceived by consumers. Reduced‐fat entire male pork sausages with vegetable fiber can be an option for marketing this meat. Consumers consider castration to be justified if it improves the sensory perception of entire male pork.
