งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาปัจจัยที่มีผลต่อกระบวนการผลิตขนุนแช่เยือกแข็ง ขั้นต้นศึกษาหาพันธุ์ที่เหมาะสมต่อการแช่เยือกแข็ง พบว่าขนุนพันธุ์เหลืองบางเตยซึ่งมีองค์ประกอบเป็น ความชื้น 75.74% โปรตีน 2.67% ไขมัน 1.24% คาร์โบไฮเดรต 18.21% เถ้า 1.19% เส้นใยอาหาร 0.95% น้ำตาลรีดิวซ์ 3.65 g/100g มีลักษณะยวงเหมาะสมในการแช่เยือกแข็ง มี %freezing loss ...openaire +1 more source
