Flavor and Taste Comparison between Japanese Black Cattle Beef, Dairy Cattle Beef and Imported Beef

和牛肉が乳牛や輸入牛肉と比較しておいしい理由を解明するため,呈味に関与する諸要因について化学的分析と官能検査とにより検討した.その結果は以下のとおりである.(1) ハンバーガーパティは和牛の赤肉と脂肪を原料としたものが最も風味がよく,乳牛の脂肪を用いたものは評価が低かった.牛肉の呈味性には脂肪の種類が大きな影響を与えるものと考えられる.(2) 赤肉中のヌクレオチド,有機酸,ジペプチドについては,牛の種類によって含有量に大きな差はなかったが,遊離アミノ酸は和牛が多かった.(3) 脂肪については3者とも中性脂質がほまとんどで,リン脂質や糖脂質は含まれていない.脂肪酸組成では大きな差は見られなかった.(4) 赤肉部分については和牛を共通で用い,これに和牛,乳牛 ...
