QUALITY EVALUATION OF BISCUIT INCORPORATED WITH MANDARIN PEEL POWDER

The current research is aimed to utilize mandarin peel in biscuits baking. Chemical composition showed that peel had high contents of ash, crude fiber; whereas low protein and carbohydrate content compared to wheat flour.
