Antimicrobial and Nutritional Properties of Edible Oyster Mushroom (Pleurotus ostreatus) Extracts Against Foodborne Pathogens Relevant to Maternal and Child Malnutrition in Africa

Somali Pleurotus ostreatus was extracted with water and ethanol and evaluated for nutrition, antibacterial activity, GC–MS profile, and molecular docking. The mushroom was rich in protein, fiber, iron, and zinc, while the ethanolic extract showed stronger moderate in vitro inhibition of selected foodborne pathogens than the aqueous extract.
