Molecular and Cellular Biochemistry, 2003Chlorogenic acid (CGA) is considered to act as an antioxidant. However, the inhibitory effects of CGA on specific radical species are not well understood. Electron spin resonance (ESR) in combination with spin trapping techniques was utilized to detect free radicals.

On enzyme inhibition by oxidized chlorogenic acid
Life Sciences, 1964Abstract The inhibiting action of oxidized chlorogenic acid (Ox-CGA) on the activity of several enzymes has been investigated. A comparative analysis of the effects of Ox-CGA with those of p-hydroxy-mercuri-benzoate seems to exclude the -SH groups of the proteins as the main site of action of Ox-CGA.
