Structural Characterization of Insoluble Dextran Produced by Leuconostoc mesenteroides NRRL B-1149 in the Presence of Maltose

Leuconostoc mesenteroides NRRL B-1149 is known to produce dextran with 52 % α-(1→6) and 40 % α-(1→3) linkages. Low solubility of dextran in water is associated with the presence of high percentage of α-(1→3) linkages.

Streptococcus mutans Dextransucrase: Requirement for Primer Dextran [PDF]

Dextran stimulation (priming) of the dextransucrase (EC 2.4.1.5) from Streptococcus mutans strain 6715 was studied. The dextransucrase activity in supernatant fluids from glucose-grown cultures was shown to be partially primer dependent. During extended storage at 4 C the enzyme retained its activity.

(1) ショ糖培地に生育させたLeuc. mesenteroidesの菌体を音波処理して調製した無緬胞抽出液を,B2グルコシドに作用するとB2を遊離した.また抽出液をB2イソマルトシドに作用すると,B2イソマルトシドはB2グルコシドを経てB2へ,またB2イソマルトトリオシドに作用すると,B2イソマルトトリオシドはB2イソマルトシド,B2グルコシドを経てB2へ順次分解された.B2にグルコース分子が平均10個,あるいは18個結合したようなB2高級少糖類も徐々に,それぞれグルコース分子の結合数がより少ないB2少糖類へ分解された. (2)硫酸アンモニウム分別塩析法によってB2グルコシル化合物の生成および分解の両活性区分が大別された.
