Charles-Antoine-Theodore Villiers: sugars and alkaloids

open access: yesEducación Química
Charles-Antoine-Théodore Villiers (1853-1925) was a very prolific French chemist who discovered that the fermentation of starch with Bacillus amylobacter yielded dextrins (cellulisines) without being accompanied by maltose and glucose, a process clearly ...

Evolution of free amino acids and volatile compounds in dry‐cured fermented 'salchichón' sausages superficially inoculated with different molds

open access: yesJournal of the Science of Food and Agriculture, EarlyView.
Abstract BACKGROUND Surface molds contribute to flavor development in dry‐cured fermented sausages through their effects on proteolysis, amino acid catabolism, and volatile compound formation. This study evaluated the influence of Aspergillus oryzae, Penicillium camemberti, Penicillium roqueforti and Penicillium nalgiovense on the evolution of free ...

Impact of sprouting pretreatment on physicochemical properties and in vitro digestibility of buckwheat milk

open access: yesJournal of the Science of Food and Agriculture, EarlyView.
Abstract BACKGROUND Buckwheat is a strategic raw material for plant‐based milk production due to its gluten‐free nature and rich bioactive profile. However, antinutritional factors and starch structure limit the nutritional quality and technological properties of such beverages.

Rapid method to determine the molecular weight of dextrins and dextrans

open access: yes, 2009
A rapid method was developed to determine the molecular weight (Mn) of ß-limit dextrin and dextrans (Leuconostoc mesenteroides) using a reducing power approach. The Mn of the ß-limit dextrin was also estimated from high performance liquid chromatography (

Oxypaeoniflorin Attenuates Alcohol‐Associated Liver Disease, Potentially Involving TEAD4‐Mediated Inflammatory Signaling Cascades

open access: yesPhytotherapy Research, EarlyView.
Oxypaeoniflorin (Opae) alleviates alcohol‐associated liver disease (ALD) by suppressing the TEAD4‐NLRP3 transcriptional axis. In hepatocytes, Opae inhibits YAP/TEAD4‐mediated NLRP3 inflammasome activation, thereby downregulating Lipin1/Srebp1‐associated lipid dysregulation.
