Abstract A method has been developed for derivatization of monoglycerides and diglycerides to their propyl esters by using propionic anhydride in the presence of pyridine. The derivatives are volatile and thus can be separated and identified by gas chromatography (GC). Completion of the reaction is monitored by thin-layer chromatography.
