Potential low-calorie model that inhibits free fatty acid release and helps curcumin deliver in vitro: Ca2+-induced emulsion gels from low methyl-esterified pectin with the presence of erythritol.

International Journal of Biological Macromolecules, 2022
Our previous study showed that pectin de-esterified by high hydrostatic pressure assisted enzymatic method (HHP-pectin) had better Ca2+-induced gel performance and more stable emulsion than those from conventional enzymatic and alkaline methods.

Erythritol is a sweet antioxidant

Nutrition, 2010
Hyperglycemia, oxidative stress, and the onset and progression of diabetic complications are strongly linked. Reduction of oxidative stress could be of utmost importance in the long-term treatment of diabetic patients. The chronic nature of the disease calls for a mode of antioxidant intake that can be sustained easily, e.g., by the diet. Erythritol, a

Erythritol dehydrogenase from Aerobacter aerogenes

Biochimica et Biophysica Acta, 1961
Abstract An enzyme, which has been partially purified from Aerobacter aerogenes, catalyzes the reversible, diphosphopyridine nucleotide-linked oxidation of polyols of three to five carbons in which the hydroxyls about carbons 2 and 3 are in a cis configuration. Oxidation is at carbon 2 and results in the formation of a ketose.

Gelation behavior and mechanism of low methoxyl pectin in the presence of erythritol and sucrose: The role of co-solutes.

International Journal of Biological Macromolecules
Co-solutes such as sucrose and sugar alcohol play a significant part in low methoxyl pectin (LMP) gelation. To explore their gelation mechanism, we investigated the gelation behavior of LMP in the presence of erythritol and sucrose with Ca2+.

Eutectics of Erythritol Tetranitrate

The Journal of Physical Chemistry C, 2017
With the recent availability of erythritol as an artificial sweetener, the synthesis of erythritol tetranitrate (ETN) has become economically feasible. This paper examines the eutectics of ETN, to see if it can be a useful component in melt-casted explosive formulations.

Multidimensional combinatorial screening for high-level production of erythritol in Yarrowia lipolytica.

Bioresource Technology
Yarrowia lipolytica was successfully engineered to synthesize erythritol from crude glycerol, a cheap by-product of biodiesel production, but the yield remained low. Here, a biosensor-guided adaptive evolution screening platform was constructed to obtain

Metabolic effects of the natural sweeteners xylitol and erythritol: A comprehensive review

Critical Reviews in Food Science and Nutrition, 2020
Xylitol and erythritol are widely used in a variety of food and oral care products as sugar substitutes. Although a number of studies have been conducted on the health benefits of xylitol since the 1960s, erythritol only attracted the attention of ...

Noncariogenicity of Erythritol as a Substrate

Caries Research, 1992
Erythritol is a sugar alcohol produced by Aureobasidium sp. from glucose. It is 75-80% as sweet as sucrose and is also nonhygroscopic. The aim of this study was to evaluate this sugar substitute from a cariological point of view. Erythritol was neither utilized as a substrate for the lactic acid production nor for plaque formation of mutans ...

Ingestion of the Non-Nutritive Sweetener Erythritol, but Not Glucose, Enhances Platelet Reactivity and Thrombosis Potential in Healthy Volunteers—Brief Report

Arteriosclerosis, Thrombosis and Vascular Biology
BACKGROUND: Although artificial and non-nutritive sweeteners are widely used and generally recognized as safe by the US and European Union regulatory agencies, there have been no clinical trials to assess either long-term cardiovascular disease risks or ...

The efficacy of diode laser and subgingival air polishing with erythritol in treatment of periodontitis (clinical and microbiological study)

BMC Oral Health
There is insufficient clinical and microbiological evidence to support the use of diode laser and air-polishing with erythritol as supplements to scaling and root planning(SRP).
