Flavor profiles of untreated pea protein isolate (light green, solid line) compared to High Pressure Homogenization (HPH) treated (dark blue, dash‐dot line) and High Hydrostatic Pressure (HHP) treated pea protein isolates (dark green, dashed line). Samples were described as mainly pea‐like/bean‐like, flour‐like/cereal‐like, bitter, fatty, and sour ...

Wheat Bran Proteins as a Functional Ingredient in Plant‐Based Mayonnaise
Wheat bran proteins (albumin, globulin, and glutelin) were extracted through Osborne fractionation and incorporated into mayonnaise formulations as plant‐based emulsifiers. Among the fractions, albumin‐based mayonnaise demonstrated stable emulsion properties at acidic pH (4.6) and a texture comparable to traditional mayonnaise, highlighting its ...

This Perspective introduces a dual saturation framework showing that soil carbon sequestration is constrained not only by biophysical limits, but also by social–institutional barriers. Policy complexity, documentation burdens, and operational saturation can restrict farmer adoption and create a mitigation gap, highlighting the importance of stable ...

Abstract Background Bacterial wilt of enset (Ensete ventricosum (Welw.) Cheesman) is a severe disease caused by Xanthomonas campestris pv. musacearum, resulting in complete crop failure and considerable damage. This study assessed the biochemical responses of two enset clones (one resistant and one susceptible) when inoculated with the pathogen and ...

Neglected legume crops of Serbia: Faba bean (Vicia faba) [PDF]
Faba bean is cultivated locally in Serbia with no available official data. The collection at Institute of Field and Vegetable Crops in Novi Sad contains 141 accessions of food and feed faba bean. Forage yields in faba bean may surpass 40 t ha-1 of green forage and 8 t ha-1 of forage dry matter, while grain yields are often higher than 5 t ha-1.

ABSTRACT The 15 guar genotypes were exposed to different concentrations of salt (0, 10, and 15 dS m−1 NaCl) in a factorial experiment (RCBD, r = 3) and different morpho‐physiological, physiological, growth, and yield characteristics were assessed. The lowest seed gum (21.11%), carbohydrate (23.59%), protein content (24.20%), fat (2.21%), fiber (9.38%),

ABSTRACT Instrumental characterisation of the volatile organic compounds (VOCs), responsible for off‐aroma, is mainly centred on gas chromatography‐based techniques. Despite previous reviews that have addressed the chemical compounds and biosynthetic pathways of off‐aroma generation, to date, there is a lack of a comprehensive review that critically ...

Impact of Temperature on Podding in Faba Bean (Vicia faba)
Faba bean is grown globally for human consumption and animal feed and is a significant rotation crop in cereal dominant areas in many countries including Australia. It is sensitive to several abiotic stresses, such as drought, frost and high temperatures, especially at the reproductive stage. However, little is known of the upper and lower temperature

ABSTRACT Demand for plant‐based foods, including legumes, is growing as a result of consumer preferences shifting toward food sustainability and plant‐based, protein‐rich foods. However, to ensure the food safety of such alternatives, assessing the prevalence of foodborne pathogens related to these products is critical, especially with their increasing
