Mechanism of the initial oxidation of monounsaturated fatty acids

Food Chemistry, 2022
The development of detection technology prompts the need to elaborate on the theory behind the oxidation of unsaturated fatty acids. This study integrates the detection of monounsaturated fatty acid oxidation at 60 °C with computational simulations to provide an advanced theoretical basis for the formation of hydroperoxides and allyl.

Estolides from meadowfoam oil fatty acids and other monounsaturated fatty acids

Journal of the American Oil Chemists' Society, 1993
The formation of estolides was detected during the studies on dimerization of meadowfoam oil fatty acids. By adjusting the reaction conditions, it was possible to produce monoestolides with little dimer or trimer formations. Estolides have potential use in lubricant, cosmetic and ink formulations and in plasticizers.

The Role of Monounsaturated Fatty Acids in Ferroptosis

The FASEB Journal, 2022
Exogenous monounsaturated fatty acids (MUFAs) such as oleate (18:1 n‐9) protect cells from ferroptotic cell death, contributing to cancer cells’ metastatic potential in vivo . Understanding how MUFAs prevent ferroptosis is critical for developing new anti‐cancer therapeutics that target this ...

A changing role for dietary monounsaturated fatty acids

Journal of the American Dietetic Association, 1989
Evidence is accumulating that diets low in saturated fatty acids and high in monounsaturated fatty acids are effective in controlling blood lipid levels; a likely consequence could be a beneficial effect on the risk of coronary heart disease. Although as yet limited in number, studies have shown monounsaturated fatty acids to be the equivalent of ...
