2009Abstract Carbohydrates are polymers made up of chains of sugars. Sugars are ring compounds and in nature there are two simple kinds: the pentoses (the best known of which is fructose, or fruit sugar) have five-membered rings, while the hexoses (such as glucose−) have six-membered rings.
