The effects of green banana flour fortification on volatiles compounds of bread: A fingerprinting approach

open access: yesApplied Food Research, 2022
Summary: This study investigated the effects of whole green banana flour (GBF) fortification on volatiles compounds of bread. The volatiles were determined in the bread crumb and crust using headspace solid-phase micro-extraction and gas chromatography ...

Breaking the Durability–Power Trade‐Off: Boron‐Directed Faceted O3 Cathodes for High‐Rate Sodium‐Ion Batteries

open access: yesAdvanced Energy Materials, EarlyView.
Boron‐oxide‐assisted particle engineering stabilizes O3‐type layered cathodes for sodium‐ion batteries by mitigating phase transitions and lattice strain. Acting as flux and structural modifier, boron forms submicron hexagonal platelets with (003) facets and expanded Na‐layer spacing, enabling rapid Na⁺ diffusion and mechanical resilience.

Multisectoral Convergence of Food, Nutrition and Sanitation Programs for Child Health: Evidence From Country‐Level Programs in India

open access: yesApplied Economic Perspectives and Policy, EarlyView.
ABSTRACT This paper underscores the critical role of multisectoral convergence in enhancing child health, particularly in addressing anemia, a micronutrient deficiency linked to both diet and sanitation. We explore how the integration of nationwide food and nutrition programs with sanitation initiatives impacts anemia in Indian children under three ...

Parallel repetition via fortification: analytic view and the quantum case [PDF]

open access: yes, 2016
In a recent work, Moshkovitz [FOCS'14] presented a transformation n two-player games called "fortification", and gave an elementary proof of an (exponential decay) parallel repetition theorem for fortified two-player projection games.

Reduced plasma homocysteine levels in elderly Australians following mandatory folic acid fortification – A comparison of two cross-sectional cohorts

open access: yesJournal of Nutrition & Intermediary Metabolism, 2017
Objective: In 2009, Australia implemented mandatory folic acid fortification in wheat flour for bread-making. The primary aim was to improve folate status in reproductive-aged women to reduce neural tube defect incidence.

The effects of iron fortification on the gut microbiota in African children: a randomized controlled trial in Cote d'Ivoire.

open access: yes, 2010
BACKGROUND: Iron is essential for the growth and virulence of many pathogenic enterobacteria, whereas beneficial barrier bacteria, such as lactobacilli, do not require iron.

Global heterogeneity in folic acid fortification policies and implications for prevention of neural tube defects and stroke: a systematic reviewResearch in context

open access: yesEClinicalMedicine
Summary: Background: Folic acid (pteroylmonoglutamic acid) supplements are highly effective for prevention of neural tube defects (NTD) prompting implementation of mandatory or voluntary folic acid fortification for prevention of NTDs.

An Overview of Polyphenols and Color Chemistry in Cocoa

open access: yesAgriFood: Journal of Agricultural Products for Food, EarlyView.
Cocoa polyphenols have been traditionally known for their beneficial properties in human health. However, less is known about their other impacts on cocoa processing. This review highlights current discoveries in the role of polyphenols in the formation of color in cocoa.
