Influence of Color on Perception of Sweetness and Fruit Flavor of Fruit Drinks
Food Science and Technology International, 2001The objective of this work was to study the effects of color on the perception of both sweetness and fruit flavor of different fruit (peach, orange, kiwifruit and berries) beverages. Four samples of each fruit beverage were prepared by adding different colorants but maintaining the same composition.

Mutation of CsARC6 affects fruit color and increases fruit nutrition in cucumber
Theoretical and Applied Genetics, 2023A mutation of CsARC6 not only causes white fruit color in cucumber, but also affects plant growth and fruit quality. Fruit color of cucumber is a very important agronomic trait, but most of the genes affecting cucumber white fruit color are still unknow, and no further studies were reported on the effect of cucumber fruit quality caused by white fruit ...

The Evolution of Fruit Color in Fleshy-Fruited Plants
The American Naturalist, 1990Red and black are the most common colors of bird-dispersed fruits in all regions of the world for which information is available; other colors occur, but at lower frequencies. We present 13 nonexclusive hypotheses that may contribute to the observed frequency distribution of fruit colors and assess them, in a preliminary way, using existing information.

Near Infrared Reflectance of Colored Fruits
Applied Optics, 1972The near ir (NIR) spectral properties of colored fruits were measured and showed a wide variation between species. Within a species, NIR reflectance was found to vary with the degree of ripeness of the fruit, particularly for the softer fruits. Extreme values of NIR reflectances were 75% for unripe pears and 21% for the red-ripe tomatoes.

Color and variations in color intensity of fruit of eggplant cultivars
Scientia Horticulturae, 1976Abstract Fruit color, including the distribution of various color shades in fruits of the same cultivar, and the anthocyanin and chlorophyll levels in the fruit peel of different eggplant cultivars were examined. Considerable differences in pigment level were recorded both for different cultivars and for the various color shades of fruits from the ...

Color back projection for fruit maturity evaluation
SPIE Proceedings, 2014In general, fruits and vegetables such as tomatoes and dates are harvested before they fully ripen. After harvesting, they continue to ripen and their color changes. Color is a good indicator of fruit maturity. For example, tomatoes change color from dark green to light green and then pink, light red, and dark red.
